Fante kenkey is one of Ghana’s most popular carbs dishes.Although it goes well with a variety of soups and stews, most people choose to mash it or incorporate it into a smoothie.

Half of the corn dough should be combined with a decent amount of water.
Season with a pinch of salt.Cook corn dough until it is halfway done.
Using a wooden spoon or spatula, spread the semi-boiled dough over a large clean saucepan and add the remaining faw corn dough.
Mix well and shape into desired shapes.Corn husks or plantain leaves can be used to wrap the dough.
Place a large cooking pot on top of the heat source.
Arrange the moulded/wrapped dough nicely in the bottom of a large cooking pot with corn husks or plantain leaves.
Enough water should be added.
Cover and cook until everything is done.
You can test whether the kenkey is cooked by removing one with a wooden spatula and inspecting it.
Serve with your favorite stew or soup. It can also be used to make mashed kenkey.
