Pito

The Pito drink is a type of beer brewed from fermented millet or sorghum in northern Ghana, sections of Nigeria, and other parts of West Africa. It’s made by small producers and served in a calabash outside the producer’s house, where benches are occasionally provided.

Pito is a traditional Ghanaian drink that is traditionally served at funerals and other social functions. The majority of it is made of fermented guinea corn.

Ingredients

1. Guinea corn.

2. Enough Water.

Instructions

1. Take the guinea corn to be powdered to the mill.

2. In a large pan, soak the powdered guinea corn in water and stir thoroughly.

3. Once the mash has settled, remove the water on top.4. Bring the remaining mash to a boil.

5. Once the mixture has reached a boil, pour it into a container and set aside for 24 hours to ferment.

6. Once the fermentation is complete, return the mixture to a boil.

7. Strain the mixture to separate the liquid from the mash.

8. After removing the sediment from the first pito batch, dry it.

9. Serve pito in a calabash or in a glass over ice.
